Ingredients

  • 4 Tbsp margarine
  • 1/4 tsp salt
  • 1/2 onion, thin sliced
  • 1/2 bell pepper, quartered, 1/4-inch slices
  • 16 oz can stewed tomatoes, drained
  • 2 bay leaves
  • 5 whole cloves

Instructions

  1. Melt margarine in a heavy 2-quart saucepan.
  2. Add salt to the margarine.
  3. Saute onion until transparent.
  4. Add quartered bell pepper slices over onions and saute on low for 3 to 4 minutes.
  5. Drain the stewed tomatoes and reserve the liquid for the paste.
  6. Add bay leaves and drained tomatoes to the saucepan.
  7. Add whole cloves (preferably in a small tea bag for easy removal) and simmer covered for about 20 minutes.
  8. Prepare a flour paste by adding water to the reserved tomato liquid to make 1/2 cup and mixing with 1/4 cup flour.
  9. Remove bay leaves and cloves from the sauce.
  10. Add most of the prepared paste into the sauce in small pockets and stir.
  11. Test for thickness; it should fall off a tilted spoon easily.
  12. Add more paste if the sauce runs off like juice.
  13. Bring the mixture to a boil.
  14. Cook the flour for 1 minute, stirring continuously.
  15. Adjust salt to taste before serving.

Tips & Substitutions

For a richer flavor, try substituting butter for margarine. If you don't have stewed tomatoes, fresh diced tomatoes can work in a pinch; just add a bit of extra seasoning to account for lost flavor. For a spicier version, consider adding a pinch of red pepper flakes or some diced jalapeños. Remember to adjust the thickness of the sauce to your liking by adding more or less of the flour paste.

Serving Suggestions

This Spanish sauce is perfect for drizzling over an omelet or scrambled eggs. It also pairs beautifully with Spanish Pinto Beans or as a topping for grilled chicken. Consider serving it alongside a fresh salad or crusty bread to soak up the delicious sauce. For a complete meal, accompany it with a side of Sweet Pea Soup.

Storage & Reheating

Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. To reheat, place the sauce in a saucepan over low heat, stirring occasionally until warmed through. If the sauce thickens too much in the fridge, you can add a splash of water or broth while reheating to achieve your desired consistency.
