Ingredients

  • 6 large potatoes
  • 3 eggs, raw
  • 2 eggs, boiled
  • 1/2 tsp salt
  • 1 tsp sugar
  • 2 Tbsp cider vinegar
  • chopped onion
  • sweet pickle relish

Instructions

  1. Peel, slice, and boil the potatoes.
  2. Mash the hot potatoes and add raw eggs while still hot, mixing thoroughly.
  3. Add the boiled eggs, salt, sugar, and cider vinegar to the mashed potatoes.
  4. Stir in chopped onion and sweet pickle relish to taste.
  5. Top with sliced boiled eggs before serving.
  6. Serve warm or cold.
