Ingredients

  • 1 box yellow cake mix
  • 1 (11 oz.) can mandarin oranges with juice
  • 1/2 cup oil
  • 1 (22 oz.) can crushed pineapple with juice
  • 1 (6 oz.) box instant vanilla pudding
  • 1 large carton light whipped topping

Instructions

  1. Mix cake mix, oil, and mandarin oranges with juice.
  2. Add eggs, one at a time, beating after each addition.
  3. Pour batter into two greased 9-inch cake pans.
  4. Bake at 325°F for 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cakes to cool completely.
  6. Combine crushed pineapple, pineapple juice, vanilla pudding mix, and whipped topping.
  7. Spread the pineapple mixture over the cake layers and between the layers.
  8. Refrigerate until ready to serve.
