Ingredients

  • 3 cups flour
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 (10 oz.) packages frozen strawberries
  • 1 1/4 cups salad oil
  • 4 eggs
  • 1 teaspoon red coloring

Instructions

  1. Sift the dry ingredients together in a bowl.
  2. Make a well in the center.
  3. Add the frozen strawberries (including juice), salad oil, and beaten eggs to the well.
  4. Mix well by hand until combined.
  5. Stir in the red coloring.
  6. Spoon the batter into two greased and floured loaf pans.
  7. Bake at 350°F (175°C) for one hour.
  8. Cool on a rack before removing from pans.
