Ingredients

  • 2 c. sugar
  • 1 c. butter or Crisco
  • 4 eggs
  • 2 tsp. lemon extract
  • 1 c. buttermilk
  • 3 c. plain flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1/4 tsp. salt

Instructions

  1. Mix the sugar, butter (or Crisco), eggs (one at a time), and lemon extract until well combined.
  2. Alternately add the sifted flour (which has been sifted 3 times), buttermilk, baking powder, soda, and salt to the mixture, mixing well after each addition.
  3. Pour the batter into a greased tube pan or 2 loaf pans.
  4. Bake at 325°F (or 350°F) for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
