Ingredients

  • 1 1/2 cups nonfat Ricotta cheese
  • 1 egg
  • 1 cup shredded part skim Mozzarella cheese
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • 4 cups tomato sauce
  • 6 ounces no cook lasagna noodles
  • 2 cups shredded cooked chicken

Instructions

  1. Blend Ricotta, egg, 1/2 cup Mozzarella, 1/2 teaspoon Italian seasoning, and 2 tablespoons Parmesan in a bowl.
  2. Stir remaining Italian seasoning into tomato sauce.
  3. Spread 3/4 cup of sauce in the bottom of an 8 x 8 x 2-inch square baking dish.
  4. Place a single layer of lasagna noodles over the sauce.
  5. Spread half of the Ricotta mixture on top of the noodles.
  6. Layer lasagna noodles, 3/4 cup of sauce, lasagna noodles, remaining Ricotta mixture, lasagna noodles, 1/2 cup of sauce plus cooked chicken, and lasagna noodles again.
  7. Top with remaining sauce, shredded Mozzarella, and Parmesan cheese.
  8. Cover the dish with foil.
  9. Bake in a 400°F oven for 40 minutes.
  10. Remove foil and bake for an additional 10 minutes or until golden and heated through.
