Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1 (1 1/4 oz.) taco seasoning mix
  • 1 (15 oz.) can tomato sauce
  • 1 (15 1/4 oz.) can whole kernel corn, drained
  • 2 c. shredded Cheddar cheese
  • 2 c. Bisquick baking mix
  • 1 c. milk
  • 2 eggs

Instructions

  1. Cook ground beef and chopped onion in a skillet until beef is browned.
  2. Drain excess fat from the beef mixture.
  3. Spoon the beef mixture into an ungreased 13 x 9 x 2-inch baking dish.
  4. Stir in dry taco seasoning mix, tomato sauce, and drained corn.
  5. Sprinkle shredded Cheddar cheese evenly over the beef mixture.
  6. In a separate bowl, stir together Bisquick baking mix, milk, and eggs until blended.
  7. Pour the batter over the beef and cheese layers.
  8. Bake in a preheated oven at 350°F (175°C) for 35 minutes or until golden brown.
  9. Serve warm with sour cream, chopped tomato, and shredded lettuce if desired.
