Ingredients

  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 1 cup apple, chopped fine
  • 1/3 cup brown sugar
  • 1/3 cup nuts, finely chopped

Instructions

  1. Cream shortening and sugar together.
  2. Add egg and blend well.
  3. Sift together flour, baking powder, salt, and 1/2 teaspoon cinnamon.
  4. Alternately add milk and flour mixture to the shortening mixture, mixing until just combined.
  5. Fold in chopped apple.
  6. Fill muffin cups half full with batter.
  7. Bake in a preheated oven at 375°F (190°C) for about 20 minutes, or until golden brown.
