Ingredients

  • 2 gallons cucumber
  • 2 cups lime
  • 3 cups vinegar
  • 1 teaspoon alum
  • 1 ounce red food coloring
  • 4 cups water
  • 5 pounds sugar
  • 16 ounces red hot cinnamon candies
  • 8 cinnamon sticks

Instructions

  1. Peel, de-seed, and slice cucumbers.
  2. Soak the cucumber slices in lime and enough water to cover for 24 hours.
  3. Rinse the cucumber slices well.
  4. Mix together 1 cup vinegar, alum, and red food coloring.
  5. Cover with water and simmer for 2 hours. Drain.
  6. Mix together 2 cups vinegar, 4 cups water, sugar, red hot cinnamon candies, and cinnamon sticks.
  7. Bring this mixture to a boil every day for 3 days.
  8. On the third day, pack the pickles into jars.
