  • 1 c. lime
  • 4 1/2 lb. sugar

  • 1 Tbsp. whole cloves
  • 1 bag cinnamon candy

Instructions

  1. Peel, seed, and slice cucumbers.
  2. Use cucumbers that are too big for other uses; those that have turned yellow are okay.
  3. Mix together 1 gallon water and the lime.
  4. Pour the lime water mixture over the cucumbers; let stand for 24 hours.
  5. Wash the cucumbers thoroughly.
  6. Put the cucumbers into ice water for 3 hours; drain.
  7. Make syrup by combining sugar, vinegar, and food coloring; bring to a boil.
  8. Make a spice bag with cinnamon sticks, whole cloves, and cinnamon candy.
  9. Add the spice bag to the boiling vinegar mixture along with the syrup; bring back to a boil.
  10. Add the prepared cucumbers into the mixture; bring back to a boil.
  11. Let stand for 24 hours.
  12. Bring the mixture back to a boil and boil for 30 minutes.
  13. Pack the hot pickles into clean, hot jars.
  14. Adjust the lids on the jars.
  15. Process the jars in a boiling water bath for 10 minutes.
