A vibrant, tangy tomato salad with fresh herbs and a savory vinaigrette, perfect as a refreshing appetizer or side dish for summer gatherings.

Ingredients

  • 6 medium ripe tomatoes, peeled
  • 1 tsp salt
  • 1/4 tsp pepper
  • few leaves of thyme or 1/2 tsp dried marjoram
  • 1/4 cup parsley, snipped
  • 1/4 cup chives, snipped
  • 2/3 cup salad oil
  • 1/4 cup tarragon vinegar

Instructions

  1. Place peeled tomatoes in a dish and cover with salt, pepper, thyme or marjoram, and parsley and chives.
  2. Combine salad oil and tarragon vinegar and pour over the tomatoes.
  3. Chill for 1 hour, then drain excess liquid.
  4. Garnish with additional parsley and dressing before serving.
