Ingredients

  • 1 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cream of tartar
  • 1/4 cup boiling water
  • 1 teaspoon vanilla extract
  • 2 cups walnuts

Instructions

  1. Combine sugar, cinnamon, cream of tartar, and water in a heavy saucepan.
  2. Cook to 246° on a candy thermometer, firm-ball stage.
  3. Stir in vanilla extract and walnuts.
  4. Spread the walnuts on a baking sheet to cool and harden.
