Ingredients

  • 2 tsp. paprika
  • Crisco oil
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. cayenne pepper
  • 1 tsp. sage
  • 1/2 tsp. black pepper
  • 1/2 tsp. dry thyme leaves
  • 1/2 tsp. onion powder
  • 1 frying chicken (2 1/2 to 3 lb.) cut up or pieces
  • 1 1/3 cup all-purpose flour, divided
  • 1 egg
  • 1 cup water

Instructions

  1. Heat 2 to 3 inches of Crisco oil to 365°F in a deep fryer.
  2. Combine paprika, salt, garlic powder, cayenne pepper, sage, black pepper, thyme, and onion powder in a small bowl.
  3. Remove 2 1/2 teaspoons of the spice mixture and set aside.
  4. Rub the remaining spice mixture onto the chicken pieces.
  5. In a large bowl, combine 1 cup of flour with the remaining spices from the mixture.
  6. Add the beaten egg and water to the flour mixture and stir until smooth.
  7. Place 1/3 cup of flour in a paper or plastic bag.
  8. Add chicken pieces a few at a time to the flour in the bag, shake to coat, then dip in the batter.
  9. Let excess batter drip off, then re-coat chicken with the flour mixture.
  10. Fry a few pieces at a time in the hot oil for 15 to 20 minutes or until cooked through and crispy.

Tips & Substitutions

For an extra kick, consider adding hot sauce to the batter. If you don't have Crisco oil, vegetable or peanut oil can be good substitutes. Make sure to maintain the oil temperature; failing to do so can result in greasy chicken. For a gluten-free option, use a gluten-free flour blend in place of all-purpose flour.

Serving Suggestions

Serve your Spicy Cajun Fried Chicken with a side of coleslaw for a refreshing crunch or pair it with biscuits for a classic Southern meal. It also pairs beautifully with Saralyn'S Chicken Tetrazzini for a hearty family dinner. Consider adding some pickles or a spicy dipping sauce on the side for extra flavor.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in an oven preheated to 375°F for about 10-15 minutes to restore its crispiness. Avoid microwaving, as this can make the chicken soggy.

Frequently Asked Questions

Can I use skinless chicken for this recipe?

While skinless chicken can be used, it may not yield the same crispy texture and flavor as chicken with skin. The skin helps to hold in moisture and enhances the overall taste, making it a preferred choice for frying.

How can I make this recipe less spicy?

To reduce the heat, simply cut down on the cayenne pepper in the spice mix. You can also replace it with sweet paprika for flavor without the heat. Additionally, serving the chicken with a cooling dipping sauce can help balance the spice.

What can I do if I don't have a deep fryer?

You can fry the chicken in a large, deep skillet or Dutch oven filled with oil. Make sure to maintain a consistent oil temperature by using a thermometer, and only fry a few pieces at a time to ensure even cooking and crispy results.
