Ingredients

  • 1 pkg. frozen pie shells
  • 1/2 cup sugar
  • 2 1/2 tablespoons flour
  • 1/4 teaspoon cinnamon or almond flavoring
  • 1 cup fruit juice
  • 2 cups drained, pitted cherries
  • 1 tablespoon butter
  • 5 drops red vegetable coloring (optional)

Instructions

  1. Combine sugar, flour, cinnamon (or almond flavoring), and fruit juice in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  2. Add drained, pitted cherries and mix lightly.
  3. Pour the cherry filling into the bottom crust in the pie shell.
  4. Cover with the top crust and crimp to seal.
  5. Cut several slices in the top crust to allow steam to escape.
  6. Bake in a 400°F (200°C) oven until the crust is golden brown and the filling is bubbly, about 30 to 35 minutes.
