Ingredients

  • 2 heads fresh cabbage (medium)
  • 1/3 cup pickling salt
  • 2 small green tomatoes
  • 1 pod hot pepper

Instructions

  1. Trim the cabbage and cut the heads into small wedges.
  2. Pack the cabbage wedges into a jar, placing the green tomatoes and hot pepper about midway.
  3. Pour pickling salt over the cabbage and add water to cover.
  4. Fill a pint-sized freezer bag with water and place it on top of the cabbage to weight it down.
  5. Ensure the water covers all the cabbage pieces.
  6. Cover the jar with a dish towel, held in place with a rubber band.
  7. Store in a warm place for 10 to 14 days to ferment.
