Instructions
- If using dried pinto beans, pick over and wash the beans.
- Soak the beans overnight in water to cover.
- Cook the beans for 1 hour or until tender. Reserve 1 cup of cooking liquid.
- If using canned pinto beans, do not drain.
- Cut chorizo into bite-sized pieces.
- Add the chorizo to the cooked pinto beans and cook over medium heat for 30 minutes.
- Serve with fajitas.
