Ingredients

  • 2 cups dried pinto beans or 2 cans pinto beans
  • 1 pound chorizo Mexican sausage

Instructions

  1. If using dried pinto beans, pick over and wash the beans.
  2. Soak the beans overnight in water to cover.
  3. Cook the beans for 1 hour or until tender. Reserve 1 cup of cooking liquid.
  4. If using canned pinto beans, do not drain.
  5. Cut chorizo into bite-sized pieces.
  6. Add the chorizo to the cooked pinto beans and cook over medium heat for 30 minutes.
  7. Serve with fajitas.
