Ingredients

  • 1 turkey drumstick and thigh

Instructions

  1. Skin the turkey leg; cover it with water; add onion (peeled and quartered), coriander seed, and bay leaves.
  2. Simmer for at least an hour, until meat comes easily off the bone.
  3. Drain the turkey and reserve the broth.
  4. Rub the onions, bay leaves, and coriander through a sieve and add the juices to the broth.
  5. Brown the flour and butter roux a bit and add the warm broth.
  6. Heat and stir until mixture thickens.
  7. Add the unsweetened chocolate and allow it to melt completely in the sauce, stirring constantly.
  8. Remove from heat.
  9. Stir in raisins.
  10. Chop the chipotle or jalapeno and stir into the sauce.
  11. Cut the cooked turkey into pieces not more than 1 inch square and add to the sauce.
  12. Sprinkle sesame, caraway, and/or cumin seed on top, then stir in sherry or Madeira and garlic pressed through a garlic press.
  13. Return to heat and simmer for about 15 minutes.
  14. Serve with brown rice, yellow squash, and tortillas.
