Spinach Borani

Ingredients

  • 1 medium onion, chopped
  • 5 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon hot sauce
  • 1/2 teaspoon sweet curry powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup plain low-fat yogurt
  • 2 bunches fresh spinach, washed and dried

Instructions

  1. Saute onion and garlic in butter until soft.
  2. Add mixed spices and stir in hot sauce.
  3. Blend yogurt into mixture.
  4. Add spinach and cover; cook over medium heat until spinach is just wilted.
  5. Remove from heat, mix well, and season to taste with salt and freshly ground pepper.
