Spinach Cheese Bits

Ingredients

  • 1 (10 oz.) pkg. pepperoni
  • 2 c. Ricotta cheese
  • 1 1/2 c. grated fresh Parmesan
  • 1 tsp. dried oregano
  • 2 eggs
  • 1 (10 oz.) frozen chopped spinach
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • 1/4 c. sour cream

Instructions

  1. Mix all ingredients except pepperoni, making sure the spinach is well drained. Place a pepperoni in the bottom of each mini muffin cup pan and place a spoon full of the mixture on top. Bake at 375° for 20 to 25 minutes. Cool 10 minutes before taking out of pan.
