Spinach-Chicken Dumplings

Ingredients

  • 1 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tsp cornstarch
  • 4 Tbsp vegetable oil
  • 20 oz fresh spinach
  • 1 lb ground chicken
  • 1 egg
  • 1 1/2 Tbsp vegetable oil

Instructions

  1. Place spinach into boiling water until it softens (10 to 15 minutes).
  2. Then put spinach into cold water to cool.
  3. When cool, wring out excess water.
  4. Chop the spinach finely.
  5. Mix spinach with salt, pepper, cornstarch, 1 1/2 Tbsp vegetable oil, ground chicken, and egg.
  6. Moisten edges of individual pasta wraps lightly.
  7. Put 1 teaspoon of the mixture on each moistened pasta wrap.
  8. Fold the pasta wraps in half and crimp the edges to enclose the filling.
  9. Put dumplings into a nonstick pan with 1 cup cold water and cook for about 15 minutes or until the water evaporates.
  10. Cook for an additional 3 to 5 minutes on low heat in oil.
