A creamy, cheesy spinach and potato casserole perfect for family dinners or gatherings, combining mashed potatoes, spinach, and cheddar for a comforting, flavorful dish.

Ingredients

  • 6 to 8 large potatoes, peeled, cooked and mashed
  • 1 cup sour cream
  • 1/4 teaspoon pepper
  • 2 teaspoons salt
  • 2 tablespoons chopped green onion tops
  • 1/4 cup margarine or butter
  • 1 package frozen chopped spinach, thawed and well-drained
  • 1 cup shredded Cheddar cheese

Instructions

  1. In a large bowl, combine the cooked and mashed potatoes, sour cream, pepper, salt, chopped green onion tops, margarine or butter, and well-drained chopped spinach.
  2. Spoon the mixture into a greased 2-quart casserole dish.
  3. Bake uncovered at 400°F (200°C) for 15 minutes.
  4. Remove from oven, top with shredded Cheddar cheese, and bake for an additional 5 minutes until cheese melts and bubbly.
