- In a large bowl, combine the cooked and mashed potatoes, sour cream, pepper, salt, chopped green onion tops, margarine or butter, and well-drained chopped spinach.
- Spoon the mixture into a greased 2-quart casserole dish.
- Bake uncovered at 400°F (200°C) for 15 minutes.
- Remove from oven, top with shredded Cheddar cheese, and bake for an additional 5 minutes until cheese melts and bubbly.
