Ingredients

  • 1 lb. fresh spinach
  • 2 c. fresh bean sprouts or 1 (No. 2) can (8 oz.) water chestnuts, sliced
  • 4 hard-cooked eggs
  • 1/2 lb. bacon
  • 1 c. fresh mushrooms

Instructions

  1. Tear clean, crisp, thoroughly dried spinach into a large salad bowl.
  2. Rinse and drain bean sprouts or water chestnuts.
  3. Fry bacon until crispy, then crumble.
  4. Slice hard-cooked eggs and fresh mushrooms.
  5. Toss all salad ingredients together in the bowl.
  6. Set aside and serve.
