Ingredients

  • 12 oz. frozen spinach souffle
  • 1 cup soft bread crumbs, lightly toasted
  • 1 teaspoon dried minced onion
  • 2 teaspoons lemon juice
  • 24 large fresh mushrooms
  • 1 tablespoon Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Bake the spinach souffle, uncovered, for 15 to 18 minutes until slightly warmed.
  3. Combine the souffle, bread crumbs, minced onion, and lemon juice in a bowl and mix well.
  4. Remove and discard the stems from the mushrooms.
  5. Place mushroom caps in a shallow baking pan.
  6. Brush the mushroom caps with butter and sprinkle with Parmesan cheese.
  7. Bake the stuffed mushrooms for 15 minutes.
