Spinach Toss

Ingredients

  • 1/2 c. salad oil
  • 1/3 c. sugar
  • 1 small onion, quartered
  • 3 Tbsp. vinegar
  • 2 tsp. prepared mustard
  • 1/2 tsp. celery seed
  • 6 slices bacon (optional)
  • 6 c. torn spinach
  • 1 c. sliced fresh mushrooms
  • 2 hard-boiled eggs, chopped

Instructions

  1. To make dressing, use a blender container.
  2. Combine oil, sugar, onion, vinegar, mustard and celery seed.
  3. Cover and blend until smooth.
  4. Keep covered and chill.
  5. In a skillet, fry bacon until crisp; drain and crumble.
  6. In a large salad bowl, combine spinach, mushrooms, eggs and bacon.
  7. Pour dressing over salad; toss lightly.
