Ingredients

  • 6 spiny lobster tails (8 oz. each, fresh or frozen)
  • 1/4 cup butter or margarine, melted
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt

Instructions

  1. Thaw frozen lobster tails.
  2. Cut lobster tails in half lengthwise.
  3. Remove swimmercrettes and sharp edges from the lobster meat.
  4. Cut 6 pieces of heavy-duty aluminum foil, 12 x 12 inches each.
  5. Place each lobster tail on a piece of foil.
  6. Combine melted butter, lemon juice, and salt to make the sauce.
  7. Baste the lobster meat with the sauce.
  8. Fold the foil up over the lobster and seal all edges with tight double folds to make packages.
  9. Place the packages on a grill, shell side down, about 5 inches from hot coals.
  10. Cook for 20 minutes.
  11. Remove lobster tails from the foil packages.
  12. Place the lobster tails flesh side down on the grill and cook for 2 to 3 minutes until lightly browned.
  13. Serve with melted butter.
