Instructions
- Cut roaster in 8 pieces.
- Brown in deep kettle.
- Add seasonings.
- Brown 10 minutes on each side.
- When chicken is browned, remove fat and add the mixture of wine, whiskey and tomato paste.
- Add mushrooms and liquid from can.
- Simmer until tender. Do not cover pot.
- Add additional wine or water as needed.
- Turn chicken pieces once in a while.
- Serves 4. All alcohol evaporates. Diners are sober with this chicken.
