Sponge Cake Layers
Light and fluffy sponge cake layers with subtle vanilla flavor, perfect for layered desserts or as a base for frosting and fillings, suitable for celebrations and teatime treats.

Instructions
- Heat milk in a small saucepan until bubbles form around the edge of the pan.
- Remove from heat and set aside to cool slightly.
- Preheat oven to 350°F (175°C).
- Sift flour with baking powder and salt; set aside.
- In a large bowl of electric mixer at high speed, beat eggs until thick and lemon-colored.
- Gradually add the sugar, beating until the mixture is smooth and well blended, about 5 minutes.
- At low speed, beat in flour mixture just until smooth.
- Add warm milk and vanilla extract, beating just until combined.
- Pour batter into ungreased 9-inch round layer cake pans, 8-inch round layer cake pans, and an 8 x 8 x 2-inch square pan (pour slightly less batter into the square pan).
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
