Ingredients

  • 3 eggs, separated
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup sugar
  • 1/2 cup warm water
  • 1/2 teaspoon vanilla

Instructions

  1. Put the egg yolks in a bowl.
  2. Add warm water and beat until very light and almost filling a large bowl.
  3. Gradually add the sugar and continue beating until the mixture is very creamy.
  4. Stir in the flour and beat the egg whites to a froth.
  5. Fold the beaten egg whites into the sponge cake mixture gently.
  6. Add the salt, vanilla, and baking powder, and mix well.
  7. Pour the batter into an ungreased tube pan.
  8. Bake for 40 to 50 minutes: first 15 minutes at 250°F (120°C), then increase temperature to 350°F (175°C).
  9. Turn the cake upside down onto a clean towel and cover to cool gradually.
