Ingredients

  • 8 cups diced cooked potatoes
  • 2 teaspoons salt
  • 2 cups cottage cheese
  • 1 cup dairy sour cream
  • 1/4 cup minced onion
  • shredded Cheddar cheese
  • pinch of garlic salt
  • paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sprinkle the cooked, diced potatoes with salt.
  3. In a separate bowl, combine cottage cheese, sour cream, minced onion, and garlic salt.
  4. Fold the cottage cheese mixture into the potatoes until well mixed.
  5. Pour the mixture into a 2 1/2-quart casserole dish.
  6. Top with shredded Cheddar cheese.
  7. Sprinkle with paprika.
  8. Bake in the preheated oven for 1 hour.
