Ingredients

  • 3 lb. yellow squash, sliced
  • 1 large yellow onion, coarsely chopped
  • 1/2 cup butter
  • 2 1/2 cups crushed Ritz crackers
  • 1/4 cup butter
  • 2 Tbsp. cornstarch

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil the sliced yellow squash and chopped onion in a small amount of salted water until barely tender.
  3. Drain the cooked squash and onion.
  4. While the squash is cooking, prepare the topping by mixing crushed Ritz crackers with melted butter and cornstarch.
  5. Transfer the drained squash and onion to a baking dish.
  6. Sprinkle the prepared cracker topping evenly over the squash mixture.
  7. Bake in the preheated oven for approximately 30 minutes until golden brown and bubbly.
