- Mix the cornmeal, eggs, milk, oil, salt, grated squash, and grated onion together until well combined.
- Spray a cast iron skillet with Pam or another non-stick spray.
- Preheat the oven to 400°F (200°C).
- Pour the batter into the prepared skillet.
- Bake in the preheated oven for about 1 hour, or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving and enjoy.
