Ingredients

  • 1 cup cornmeal mix
  • 2 eggs
  • 1 cup milk
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 2 yellow squash, grated
  • 1 small onion, grated

Instructions

  1. Mix the cornmeal, eggs, milk, oil, salt, grated squash, and grated onion together until well combined.
  2. Spray a cast iron skillet with Pam or another non-stick spray.
  3. Preheat the oven to 400°F (200°C).
  4. Pour the batter into the prepared skillet.
  5. Bake in the preheated oven for about 1 hour, or until the top is golden and a toothpick inserted in the center comes out clean.
  6. Allow to cool slightly before serving and enjoy.
