  • 10 oz. frozen squash
  • 4 oz. jar pimento, finely chopped
  • 1 can cream of chicken soup
  • 0.25 lb. margarine, melted
  • 2 medium carrots
  • 0.5 pt. sour cream
  • 1 pkg. herb stuffing mix

Instructions

  1. Cook squash according to package directions; drain. Sliver raw carrots on the coarse side of a grater.
  2. Mix cooked squash, shredded carrots, chopped pimentos, sour cream, and undiluted cream of chicken soup in a saucepan.
  3. In a separate bowl, combine herb stuffing mix and melted margarine.
  4. Line the bottom of a baking dish with half of the herb stuffing mixture.
  5. Pour the squash mixture into the baking dish and top with the remaining half of the herb stuffing mixture.
  6. Season with salt and pepper to taste. Bake at 350°F (175°C) for 30 to 40 minutes.
