Ingredients

  • 1/4 cup onion, chopped
  • 6 carrots, sliced
  • 1/4 cabbage
  • 2 tomatoes, diced
  • 1/2 teaspoon salt
  • water
  • 2 tablespoons oleo or vegetable oil
  • 2 Ortega peppers, diced
  • 6 yellow squash or zucchini
  • 1 chicken cube
  • 1/4 teaspoon black pepper

Instructions

  1. In a large skillet, put oleo or vegetable oil. Add chopped onion and sauté for 3 minutes.
  2. Add diced Ortega peppers and sliced carrots; simmer for 8 minutes.
  3. Add 1/2 cup water, chopped squash, chopped cabbage, and diced tomatoes; simmer for 10 minutes.
  4. Add water as needed during cooking.
