Instructions
- In
- large
- saucepan,
- heat oil and saute onion until it becomes
- transparent, but not brown.
- Add celery and zucchini; saute
- for
- a few minutes.
- Add tomatoes, basil, parsley, salt and pepper.
- Fill
- pot
- with
- water, about 3 inches above all vegetables and cook for 10 minutes.
- Add potatoes and bouillon cubes;
- cook
- on low heat until potatoes are tender.
- This can be served
- with
- cooked pasta (tobetti).
- Cook pasta according to package
- directions.
- Drain
- pasta
- and
- mix
- together with vegetable mixture.
- Serve immediately.
- Makes 6 to 8 servings.
