Ingredients

  • 1/3 c. olive oil
  • 1 onion, cut into 8ths
  • 3 celery stalks and leaves, chopped
  • 4 zucchini, cubed
  • 1 1/2 c. tomatoes, chopped
  • 4 fresh basil leaves
  • 1/4 c. fresh parsley, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 chicken bouillon cubes
  • 1 lb. potatoes, peeled and cubed
  • 1/4 lb. pasta

Instructions

  1. In
  2. large
  3. saucepan,
  4. heat oil and saute onion until it becomes
  5. transparent, but not brown.
  6. Add celery and zucchini; saute
  7. for
  8. a few minutes.
  9. Add tomatoes, basil, parsley, salt and pepper.
  10. Fill
  11. pot
  12. with
  13. water, about 3 inches above all vegetables and cook for 10 minutes.
  14. Add potatoes and bouillon cubes;
  15. cook
  16. on low heat until potatoes are tender.
  17. This can be served
  18. with
  19. cooked pasta (tobetti).
  20. Cook pasta according to package
  21. directions.
  22. Drain
  23. pasta
  24. and
  25. mix
  26. together with vegetable mixture.
  27. Serve immediately.
  28. Makes 6 to 8 servings.
