Ingredients

  • 4 medium yellow squash
  • 1/2 cup olive oil
  • 2 cloves garlic
  • 1/2 cup Romano cheese
  • 1 cup seasoned bread crumbs

Instructions

  1. Mix bread crumbs, Romano cheese, and crushed garlic together and set aside.
  2. Oil an 8 x 8-inch baking dish with 3 tablespoons of olive oil.
  3. Layer bread crumb mixture and sliced yellow squash in the dish, starting with crumbs and ending with crumbs on top.
  4. Drizzle the remaining olive oil over the ingredients in the dish.
  5. Cover the dish and bake at 350°F (175°C) for 35 to 40 minutes.
  6. Remove the cover and bake for an additional 15 to 20 minutes until golden brown.
