Ingredients

  • 10 c. shredded squash
  • 2 c. green sweet peppers, chopped
  • 4 c. onion, chopped
  • 1/2 c. salt
  • 2 1/4 c. vinegar
  • 4 1/2 c. sugar
  • 1 tsp. nutmeg
  • 1 Tbsp. turmeric
  • 3 Tbsp. cornstarch
  • 1 Tbsp. celery seed
  • 1/4 tsp. ground red pepper
  • 1 (7 oz.) jar chopped pimiento

Instructions

  1. Sprinkle salt over the shredded squash, peppers, and onions.
  2. Soak the salted vegetables for 2 hours, then drain.
  3. Rinse in cold water and drain again.
  4. Add the remaining ingredients to the vegetables.
  5. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  6. Spoon the hot relish into sterilized jars.
  7. Adjust the lids on the jars.
  8. Process the jars in a boiling water bath for 10 minutes.
