Ingredients

  • 5 to 6 yellow squash
  • 1 large onion
  • 2 oz butter
  • 1/2 cup milk
  • 1 can Ro-Tel tomatoes
  • 1/8 teaspoon pepper
  • 3/4 teaspoon salt
  • 1 cup grated cheese
  • Ritz crackers

Instructions

  1. Saute sliced yellow squash and chopped onion in butter until tender.
  2. Add milk, mashed Ro-Tel tomatoes, salt, pepper, and grated cheese; stir until well combined.
  3. Pour the mixture into a 2-quart casserole dish.
  4. Top with crushed Ritz crackers.
  5. Bake at 350°F for 45 to 50 minutes until bubbly and golden on top.
