Squash Scones

Ingredients

  • 1/2 cup self-rising flour
  • 1/2 tsp pumpkin pie spice
  • 2 1/2 tbsp cold butter, chopped
  • 10.5 oz cold mashed winter squash
  • 1/4 cup brown sugar
  • 1 None large egg, beaten
  • None None butter and honey, to serve

Instructions

  1. Preheat oven to 425°F. Lightly grease a baking tray.
  2. Sift flour and spice mix into a large bowl. Cut in butter until mixture resembles coarse breadcrumbs. Make a well in the center and add squash, sugar and egg. Mix until just combined. Turn out onto a lightly floured work surface and knead lightly. Press or roll out to form a 3/4 inch thick disc. Cut into 16 rounds. Place close together on prepared tray and bake for 12-15 mins, or until scones sound hollow when tapped on the bottom. Let cool on a wire rack.
  3. Serve with butter and honey.
