Ingredients

  • 3 lb. yellow squash, cubed
  • 2 Tbsp. butter
  • 1 c. sour cream
  • 1/2 c. onion, chopped
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cook the cubed yellow squash until tender; drain.
  2. Mash the cooked squash and add the chopped onion, sour cream, butter, salt, and pepper.
  3. Put the mixture in an ungreased 1-quart casserole dish.
  4. Bake uncovered at 400°F for 20 minutes.
