Squid Couscous

Ingredients

  • 1/4 lb smoked sausage cut into 1/4 inch cubes
  • 1 small sweet onion finely minced
  • 2/3 cup minced fennel (or you can substitute celery
  • 1 cup chicken broth
  • 2/3 cup couscous
  • 8 small squid (cut the tenticles into small pieces and slice the bodies into 3/8 inch rings.
  • salt to taste
  • pepper

Instructions

  1. In a frying pan fry the sausage adding the onion and fennel. Season to taste. Braver souls might want to add hot pepper. Add the broth and couscous. Once it has boiled, let it sit a few minutes. Add the squid being careful not to overcook it (overcooked squid becomes rubber).
