Ingredients

  • 3 to 4 squirrels, dressed
  • salt
  • pepper
  • 1 bay leaf
  • flour
  • 4 Tbsp margarine
  • 1 garlic clove, sliced

Instructions

  1. Cut each squirrel into 4 pieces.
  2. Place the squirrel pieces in a cooking pot and cover with water.
  3. Add salt, pepper, and the bay leaf, then cook until tender.
  4. Remove the squirrel from the pot and roll each piece in flour.
  5. Bring the stock back to a boil and add the floured squirrel pieces and sliced garlic.
  6. Add margarine and cook until the gravy thickens.
  7. Serve the squirrel in gravy over cooked rice.
