Stacked Enchiladas

Ingredients

  • 1 large package corn tortillas
  • 2 Tbsp. Crisco oil
  • 1 large can tomato sauce
  • 1 to 2 tsp. garlic powder
  • 2 to 3 tsp. chili powder
  • 2 tsp. dried minced onion
  • Velveeta cheese, grated
  • salt to taste

Instructions

  1. Heat oil in a skillet, then add tomato sauce, chili powder, garlic powder, and minced onion.
  2. Heat over medium heat until bubbly.
  3. Place 2 tortillas in the sauce, turning once, and remove with a large spatula as soon as the tortilla is softened.
  4. Place the softened tortillas on a plate, topping each with grated Velveeta cheese.
  5. Continue layering tortillas and cheese onto the plate until a stack is built.
  6. Top the final layer with additional cheese.
  7. Add salt to taste.
  8. Serve with saltine crackers.
