Ingredients

  • 1 egg yolk
  • Sliver of a garlic clove, crushed
  • 1 teaspoon Dijon or English mustard
  • 2 teaspoons lemon juice
  • Sea salt
  • 1 cup peanut oil or vegetable oil

Instructions

  1. In a small bowl, whisk together egg yolk, garlic, mustard, lemon juice and a large pinch salt.
  2. Beginning a drop at a time, whisk in oil.
  3. As it emulsifies, add oil a little faster, in a slow steady stream.
  4. When mixture is thick, taste and adjust seasoning.
  5. It should be highly seasoned.
