Ingredients

  • 6 large artichokes
  • 2 garlic cloves, chopped
  • 4 Tbsp. olive oil
  • 2 Tbsp. fresh chopped parsley
  • ½ cup grated Pecorino Romano cheese
  • salt

Instructions

  1. Remove stems from artichokes so they will stand up. Snap off any leaves that are bruised or loose.
  2. Lay each artichoke on its side and cut 1 inch off the top.
  3. With scissors, trim each of the leaf points.
  4. Place the artichokes in a large pot standing upright.
  5. Spread open the tops of the artichokes with your hands.
  6. Sprinkle each artichoke with a little of the chopped garlic, parsley, salt, and pepper.
  7. Add about ½ inch of water to the bottom of the pan.
  8. Cover and steam the artichokes for 1 hour, or until a leaf pulls out easily.
  9. Serve as an appetizer.
