Ingredients

  • 1 large broccoli stalk, broken into flowerets and stem sliced crosswise in 1/4-inch thick slices
  • 3 medium carrots, cut in diagonal slices
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 1/2 pint cherry tomatoes
  • 2 Tbsp. low-sodium soy sauce
  • 1 Tbsp. seasoned rice vinegar

Instructions

  1. In a large saucepan, steam broccoli and carrots over boiling water for about 6 minutes, or until crisp-tender.
  2. Add water chestnuts and cherry tomatoes.
  3. Steam for about 1 minute, or until heated through.
  4. Immediately remove from pan.
  5. Place in serving bowl.
  6. Combine soy sauce and rice vinegar; drizzle over vegetables.
  7. Gently toss to combine.
