A vibrant and healthy mix of steamed carrots, potatoes, and Brussels sprouts, tossed in a lemon-margarine sauce, perfect for a nutritious side dish or light meal.

Ingredients

  • 5 large carrots, peeled
  • 4 medium potatoes, quartered
  • 12 Brussels sprouts, halved
  • 1 Tbsp. margarine, melted
  • 1 Tbsp. fresh lemon juice
  • 1/8 tsp. pepper

Instructions

  1. Place carrots and potatoes in a steamer; cover and cook for 6 minutes.
  2. Add Brussels sprouts to the steamer.
  3. Cover and cook for an additional 5 to 7 minutes, or until vegetables are tender.
  4. In a small bowl, combine melted margarine, lemon juice, and pepper.
  5. Toss the steamed vegetables with the margarine mixture before serving.
