Ingredients

  • 6 potatoes, washed and cut in quarters
  • 1 stick margarine
  • 1/2 medium onion, finely chopped
  • salt to taste

Instructions

  1. In a large pot, cover the potatoes with water and bring to a boil. Cook until the potatoes are tender.
  2. Drain 3/4 cup of the water from the pot.
  3. Add the margarine, finely chopped onion, salt, and pepper to the pot.
  4. Cook on low heat until the mixture thickens, stirring occasionally.
