Ingredients

  • 4 cups water
  • 1 cup honey
  • 1/2 cup olive oil
  • 2 packages yeast
  • 2 1/2 cups wheat berries
  • 1 1/2 cups Spelt flour
  • 1/2 cup barley
  • 1/2 cup millet
  • 1/4 cup dry green lentils
  • 2 tablespoons Great Northern dry beans
  • 2 tablespoons dry kidney beans
  • 2 tablespoons dry pinto beans
  • 1 tablespoon salt

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine lukewarm water, honey, olive oil, and yeast.
  3. Let stand for 3 to 5 minutes until yeast activates.
  4. Mix all beans, millet, wheat berries, barley, and lentils together.
  5. Grind the mixture in a flour mill until finely ground.
  6. Add the milled flour and salt to the yeast mixture.
  7. Stir until well combined, about 10 minutes.
  8. The dough will have a batter-like consistency.
  9. Pour the batter into two greased 9 x 5-inch loaf pans.
  10. Let the dough rise in a warm place for about 1 hour.
  11. Bake for 45 to 50 minutes or until the loaves are golden brown.
