Ingredients

  • 1/2 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 3 pounds turkey necks
  • 2 tablespoons shortening or oil
  • 1 cup chopped onion
  • 1 rib celery, chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 2 cups water
  • 4 chicken bouillon cubes
  • 2 teaspoons celery seed

Instructions

  1. Combine flour, salt, and black pepper in a paper or plastic bag.
  2. Add a few turkey necks at a time to the bag.
  3. Shake to coat the necks evenly.
  4. Heat shortening or oil in a stock pot over medium heat.
  5. Brown the coated turkey necks on all sides.
  6. Add chopped onion, chopped celery, minced garlic, and bay leaf to the pot.
  7. Saute for 3 minutes.
  8. Add water, chicken bouillon cubes, celery seed, and red pepper flakes to the pot.
  9. Cover and cook on medium-low heat for 2 hours or until the meat is very tender.
  10. Adjust seasoning with additional salt and pepper if needed before serving.
