Stilton-Stuffed Mushrooms

Ingredients

  • 2 Tbsp. melted butter
  • 16 large mushrooms
  • 2 Tbsp. freshly squeezed lemon juice
  • 1 large egg
  • 1/2 lb. Stilton cheese or other Blue cheese, crumbled

Instructions

  1. Wash mushrooms and pat dry with a paper towel.
  2. Remove stems gently from the mushrooms.
  3. In a bowl, toss mushrooms with lemon juice; drain.
  4. Add melted butter to the mushrooms; toss well.
  5. In a small bowl, beat the egg; add crumbled Stilton cheese.
  6. Spoon the cheese mixture into mushroom caps evenly.
  7. Broil mushroom caps 8 to 10 inches from the heat source for 5 to 6 minutes or until golden brown.
  8. Remove from broiler and use tongs to place on a serving platter.
  9. Serve hot.
